AToday I made MFF( Michelle Foster Fondant)- not the marshmallow stuff! Where have I been hiding all these years! The stuff looks and taste amazing. It seems very comparable to the texture FondX. However, mine is currently resting until tommorrow. It seems a little on the soft side. I know I used about 3 1/2 to 4 lbs of powder sugar so I was hesitant to add more until I see how it behaves tomorrow. I could have rushed a little in adding the liquid. It was not hot, but maybe not completey lukewarm. Kinda hard to gauge not knowing what the exact temperature should be like.

My question is, most fondants will slightly harden after application. How does MFF hold up? Im making a two tier cake and am a little nervous that it will stay too soft. I don't want a gummy mess when it comes time to carve it. What is better a thicker application or a thinner one, will it harden a bit once covered and exposed to the air?

AI just made this last week, but I used to for cookies. It was fairly soft to roll out, but it firmed up on the cookies quite nicely. It was not a gummy mess at all. And that was even after attaching it with water.
