How To Keep The Texture And Taste Of A Cake.

Hello Cake professional at here,
Let's say I have an event tomorrow and for some reason I decide to make the cake today, how should I storage it so it don't lose its sponginess and texture? I've already tried to put it in the fridge but next day it's not spongy and tastes not bad, but it don't taste the same. I thought its because it shouldn't be eaten right after being taken out the fridge but to be honest, my thought makes no sense to me. I've heard people saying they put it in the freezer but that idea is kind of risky and weird when it comes to not losing the original taste of a cake especially when using Italian meringue cover and decoration. Helpppppp!!!

in some shops you can find these cake bases that have covers with them so you can store your cakes for about 3 days and it doesnt effect the tase but im not sure where to get them in america as i live in london.
