AWould like to make cupcakes for my daughters first birthday this Saturday 8/10. I am not much of a baker/cook but if like to turn that around. I eat mostly healthy organic food and am looking for a great cupcake and icing recipe that isn't too hard and is semi healthy. Can anyone help?

I made this recipe for a lady that wanted a healthy option. Her and the baby liked it... http://www.ourhavenhill.com/2012/06/05/recipe-healthy-smash-cake-for-babys-1st-birthday/

Thanks for posting the link, BatterUpCake. It's a very interesting recipe. How did yours turn out? Have any pictures?

No undecorated pics. It seemed dense but it did taste good. Not necessarily like cake....more like a bananna bread texture

100 Days of Real Food is one of my favorite sites and her recipes turn out so good.  I haven't tried her cupcake recipe, but she has one:

Have you read the book "The Very Hungry Caterpillar"? A spine tingler for sure! You will never guess what happens in the end

Thanks...the kids were around 1 year old. They couldn't have cared less. Lol. When I delivered it and went inside, Holy Cow....the Mom went all out on the theme. It must have taken her a month to make all of the decorations
