AWhen making a layer cake how many boxes of cake mix do you use? I used one box of carrot cake mix poured it into two 9inch round pans half full with batter but when I stacked them, the cake was, or at least seemed tiny. They came out pretty level so I didn't have to trim much off to stack them. I see other two layer cakes that seem much taller... Any advice?

 Torte each of the cakes so you wind up with 4 layers and 3 layers of filling.  That will make your final cake taller!

since they changed the cake boxes from 18.25 ounces to 16 ounces the cakes are not as high!! That is why I decided to start making mine from scratch instead of using the box. I do notice that they have a smaller box which makes about 12 cupcakes or one single layer. If you wanted the tier to be bigger you could buy the smaller box along with the bigger box and make an extra 9 inch layer if you wanted to. Your cake would be much higher that way.
