growing up there used to be a Bakery in Chatham NJ called the Woodland Bakery, we would get a cake called the "Brown Derby" it is a chocolate cake with fruit and whipped cream...I would like to make this cake and for the life of me can't remember how many layers it had or how to make the dome top...it is more of a "bombe" presentation and not a layer cake...please don't ask me to go on goggle I already did that, I even talked to Gretchen the new owner of the Woodland, she is not giving up too much information...any help as to how to make this cake and how many layers to bake...
Well, better late than never. I just came across your post while looking for a photo of a Brown Derby. I remember them with a domed top & probably the best suggestion, and what I am going to do this week is bake 3 cake layers. I usually press them down when they come out of the oven but I will leave the one with the best dome. I usually don't get big domes & watch, they'll come out nice & flat when I try it but if so, oh well. Originally I thought about using my Wilton Doll cake mold but I wouldn't bother. No one will care what it looks like! The chocolate cake seems to rise much higher than my yellow cakes. I've made these in the past & usually skipped the crumbs. I've used whipped cream for filling & icing & I usually had 3 layers when I bought them & made them. This time I am going to use Rich's Bettercream which I have on hand. I will cut up canned peaches maybe in 3 pieces, slice strawberries & bananas. I haven't made it in probably 30 years but I have the icing to use up. My neighbors' will enjoy trying it if they haven't already. I hope you figured it out in all these years! lol FYI, I used to get them at Corrado's Family market in Clifton, NJ.
