I just quote for the figurines/flowers and add a PITA fee; then I give them a relatively short time to pay a deposit and if they don't pay in time I'm no longer available...
Although if I owe the universe some good karma and it's a firend of a friend who really really want's one of your cakes but can't really afford it and it's something that will look good in the portfolio sometimes I do them a deal.
