I've been asked to do an ice cream cake for tomorrow. I have already made the cake layer and it's in the freezer. I'm starting to get concerned about freezing the ice cream layer, because it is in a shaped pan. I thought I might put plastic wrap in the pan before I put the ice cream in, but now I'm wondering if I should also spray the pan before the plastic wrap? I don't want to lose the shape when I'm taking it out. Any idea if this would work, or should I do something totally different?

I made an ice cream brownie cake for my son in the guitar pan. I didn't put any plastic in it or spray it at all. The shape came great. I just made sure I froze it really well. I used my stand up freezer in the garage. I don't know if that made any difference for not. It wasn't a deep freeze but was a freezer by itself. I don't think we set it any colder than a normal freezer/fridge.

You shouldn't need to use a spray or plastic wrap. Just fill and freeze very well. If you start to have trouble with it coming out just dip the bottom of the pan in warm water quickly and then it should release and come out. Then just place in the freezer again.
I would think that a spray might alter the flavor or make it rancid tasting.
Plastic wrap would help it come out easier without having to melt it at all. Just peel it off when it's on the cake.
I did this twice, hated both times because the customer wanted it frosted. Well, buttercream just doesn't stick to ice cream! I finally told him I wouldn't do it again! The ice cream would start to melt and leak through the sides and run down. I think those places use whipped topping or have industrial freezers that make the ice cream hard as a rock!
Maybe I'm blabbing on and you don't even have to frost it....sorry!
