Newbie: Can I Cover A Coconut Cake With Fondant & Other Questions

This will be my first public cake! The cake is for my aunt's 100 birthday and I don't want to screw it up.
I want to make a 3 tier cake. Each tier different. 1 Coconut w/coconut, 2.Hummingbird w/Cream Cheese 3. Whipping Cream Pound Cake with Carmel or Chocolate Frosting. Can these frostings be covered with mmf or Fondarific fondant?
Should I put it together on location or at home?
Should I just have a bakery Make it?

These frostings can be covered with fondant. Just be careful if your frosting should be refrigerated as a decorated cakes will be out on display for a number of hours.
If you use good supports and secure each cake ("glue") when stacking it is easier to put together at home rather than on location.
You've got to start somewhere, so I think you should make it rather than buying one!!
