hi everyone! I've seen to this site a few times to get some tips and hint, but i finally joined to ask a specific question. My husband's boss is retiring and having a retirement party this coming Friday. my husband volunteered me to bake cupcakes for this party.
here's my question... my husband's boss is a type 2 diabetic so he watches his sugar intake very carefully. i have some good low-sugar recipes for the actual cupcakes but i need some help with icing. i normally make a vanilla buttercream with powdered sugar, Crisco, vanilla (or whatever flavor) and milk or water. i have a bag of splenda and a small bag of Domino light. I've seen on pinterest that you can put regular granulated sugar in a coffee grinder to make powdered sugar....can i do that with Splenda? or does anyone have any decent low sugar/sugar free icing recipes?
also - does anyone know if sugar free chocolate candy melts melt and harden the same as normal chocolate?
any help would be AMAZING!! thanks!!
