A friend asked me to make her a 3 tier wedding cake, the tiers will be 12"/8"/6" carrot cake with nuts covered in fondant with a christmas theme.The wedding will be on Dec 22. Its my first tiered cake I'm planning on using SPS if I can find it, but I've been wondering what to use in case I don't find it? I really want it to be sturdy so if you can give me any advice I'll be thankful. Also I'm planning on making fondant poinsettias but can't seem to find a tutorial of a realistic looking one, would appreciate help with that too. icon_smile.gif

What I use is mildshake straws (bubble straws)  between each layer and drive a strong wood dowel through the middle.  Never had any problems even with a 5-tier cake.
