Decorating By Smiller94 Updated 23 Aug 2012 , 12:51am by QTCakes1
I am doing all my baking for the wedding cake I am doing for my brother on Labor day weekend and freezing them for a few days. I am leaving for Dallas which is 6 hours away on Wednesday, crumb coat early Thursday, ice all cakes Thursday/Friday and decorate Friday for a Saturday evening wedding. does this time frame seem okay? I am making WASC cake with crusting buttercream.
thanks for the help
this is the time frame plan I have come up with , does this seem okay
Weekend 8/25th Bake /Freeze
Weekend 9/1 Bake Freeze
Wednesday 9/5 Travel to Dallas, 6 hour drive with Frozen cakes
- make Icing
- Torte, level, fill
- fridge cakes to settle overnight
Thursday 9/6
- Put Icing on all cakes
- Fridge cakes overnight
Friday 9/7
- Finish icing cakes
- Friday night, stack all cakes
Saturday 9/8 Wedding day
- Decorate , Deliver
This cake in the end will be a 8, 10, 12, 14" square cake with a 16" Dummy bottom tier.
I honestly do not like decorating day of. I might finish off some details, but I am not doing complete decorating. Things can go wrong and you may not have time to fix. Here is my typical schedule:
1st day: bake
2nd day: fill, frost, crumbcoat, final coat
3rd day: decorate
4th day: finish any details if any left, deliver

This is the same schedule I was planning on using next week, I was just unsure if the cake would still be fresh for the 4th day?
