I just make a horse themed birthday cake with a fence topper (can't attach the picture, but there's one here: http://blueridgebuttercream.wordpress.com/2012/07/16/josies-birthday-cake/) for an outdoor party. I made mine out of fondant (the pre-colored wilton, since I had it on hand) and floral wires through the uprights for support. The cross piece cracked despite being dried for 3 days, and although salvageable, I was wondering what all you experts think the best way to make this kind of topper is in very humid conditions. Straight gumpaste? Half and half fondant and gumpaste? Just create a wire armature for the whole shape?
