I'm considering buying the 50 pound box of S w e e t e x Hi Ratio shortening. Most of the sites state a disclaimer about heat damage to the shortening. In fact one on line source will NOT sell the box in summer months!!
My question: Will the finished product (Buttercream) be compromised if the Hi ratio shortening was melted or softened then came back to room temp. and used?
I live in the Atlanta area. It was 106 last weekend! I'm a little worried about the delivery of this. Especially if I am forking out 100 bucks!
Last year, I had put a small amount (about 2 cups) in a container to empty a box. It didn't melt, but had been "soft". When I opened my new box, I could tell that it had a different texture and wasn't as white. I used it for pies instead of icing. From then on I just started ordering 2 boxes for the summer just in case! It's been in the 100's here for several weeks. Is there any place close to you that you could buy it instead of ordering it? Or maybe if the place would let you pay extra for adding cryopaks to your order? I had to order chocolate one year like that. It worked but it was in the 90's and not 100's! You may get a box of hot oil by the time it goes through the shipping company's warehouse and trucks......
