For my money (that is, not enough to buy an Agbay cake leveler), the best thing is to put toothpicks around the edge (I measure the height of the toothpicks with one of those seam measurers you use in sewing) and cut through the layer with a knife that's as long as the diameter of the cake. My knife isn't quite long enough for 14" cakes and up, but it still works quite well. Another way is to put in the toothpicks and lay a length of plain dental floss over them until the ends cross, then garotte the layer by pulling the ends across each other. That works very well, too. Not all cakes will bake evenly, even with baking cores and baking strips!
