I have a customer (store-owner) that would like several cakes. I have never frozen or refrigerated cakes before. If she can do either, freeze or refrigerate, she will order more at a time from me. It will also make it easier on me when doing all the baking.
My question: can decorated fondant or buttercream cakes be frozen or refrigerated? And for what period of time?

You can freeze a fully decorated BC cake a couple of weeks in advance, as long as you place it in a cake box, then securely cover that entire cake box in plastic wrap and then place the covered box in a clean trash bag. When you are ready to use the cake, defrost the cake in all of its wrapping. Note however, that if you use a dark colored BC, the colors may bleed as the BC due to condensation. As far as fondant, I use Satin Ice, which can be refridgerated (don't think you can freeze - not sure) - again in a secure wrapping for up to 5 days.

I took 2 demo cakes to her yesterday: one completely buttercream, the other covered with SatinIce fondant and buttercream accents.
I watched her put the buttercream cake in a plastic cake holder snapping it closed into a freezer. I didn't know what to tell her about the fondant one though. It was in a regular cake box. She placed it on the counter and told me to get back with her on freezing it.

She's using these 2 cakes Friday night at a dinner party. Do you think she still needs to wrap them in the plastic?
If she is using the cake for Friday night, she is probably fine leaving them in their respective cases, but just to be on the safe side, just tell her to put each in a tied plastic bag that way she is doesn't have to worry about it at all. Just as a side note, I was working on a Coach purse (in my pictures) for my SIL b-day, which we were going to celebrate on a Sunday night and I covered the cake and put it in the fridge (without even any wrapping) - just laying on its cake board (of course the fridge was completely free of any food odors) on the Friday afternoon before hand + I kept decorating it throught the next day or so, taking it in and out and I tell you that cake was nice and fresh and the fondant tasted great. The thing to remember is to make sure to allow the fondant (as well as the BC cake) to come to room temperature before cutting and eating it; it will be great!

I called her right away and told her to go ahead and freeze the buttercream one and put the fondant one in the frig.
She owns a cheesecake business. If my cakes go over for her dinner party Friday night, she is wanting several more for Valentine's and future orders!!!! ![]()

The 2 demo cakes are my last 2 entries in my photos (Grapes and Rosebud cakes).
Last Friday, this site gave me the nerve and the nudge I needed to call her and try to figure out how to get my name out there. All the orders, etc., were totally unexpected! I was seeking advice from someone around here "in the business". I had taken my photo album with me to just show her what I was talking about. The rest was quite a shock! I'll be nervous until Monday when she calls me about my cakes....
First of all, your cakes are absolutely beautiful - don't be nervous because you are going to be great!! Now can I ask for some help from you
. . . . 1) how do you get your buttercream so smooth and flawless, 2) how did you do the present cake - in particular how did you do the lid?, 3) do you have any suggestions on covering cake boards with fondant. I did it once, but it was not as flawlessly smooth as I would have liked (like yours).
Well, I got the orders today:
(5) chocolate, (5) French Vanilla, (5) yellow, (5) red velvet, (5) strawberry and (5) white!!!! 5 for $25 ($5 each).
She would like me to start delivering them Monday. Tuesday she asked me to come in and decorate the 25 cheesecakes she's making Monday (Valentine's decorations). 25-30 cakes!!!!!!!!! By the end of next week!!!!
They will all be the 6" hearts and the 5" rounds.
Question: I know I can put them in my refrigerator decorated. Do I put them in cake boxes first? I'm assuming yes. That way I can make as many as I possibly can ahead of time (tomorrow and Sunday).....
