How Far In Advance Can I Make My Cakes And Cover W/ Fondant?

I have three cakes to make in three days next weekend and I'm worried about the time frame. I've baked all the cakes and frozen them but now I'm wondering how far in advance I can frost and fondant them? Also, do you guys store your frosted fondant covered cakes in a refrigerator?

Hi,

If the cakes are for saturday, take them out from the freezer on tuesday night and put them in the fridge. Then take them out on wednesday morning and leave them on the counter to come to room temperature. Then torte and fill. I normaly let them rest over night. If you are doing this, start frosting, covering and decorating on thursday. If you have complicated decorations, you have friday to finish the cakes. If there are any accents going on the cakes, make them now.

If you think tuesday is a bit early, do it on wednesday, but you have friday only to do the decorations.
