I should already know this, and I THINK I do.....but....

How long can I store BC in the fridge?

I had it sealed in zip-lock bags, rolled up so I had all the air out. They have been sitting in my 'veggie' drawn (bottom of the fridge) and I marked the 3/10.

I have a small cake to do (ok - I'll admit - it's my own birthday cake! LOL), but I also have a few small cakes that I will be donating to a local bake sale. Before making more, I'm wondering if I can just use it?

It's the Wilton basic class recipe - no milk or butter.

I believe I've read somewhere it's good up to 2 months but just want to be sure.

I've kept it itn the fridge for a lot longer than a month with no problem (actually, I've kept it for a lot longer than two months!). As long as it's carefully sealed so it can't pick up flavors from your fridge, I think you're good to go. Since I never have enough refrigerator space, I've been freezing my buttercream lately. I think it would survive a nuclear accident in there.
