I have 4 different kinds of cupcakes to make this weekend, but I prefer not to bake cupcakes for a Monday event until Saturday, but need to split the batter for Friday and Monday, can I store the batter in the fridge and cook up on Sunday? Has anyone done this?

Sure. I've stored batter a lot over the years. I'd be willing to bet that every bakery has done it also.
