Fresh Fruit Filling, When To Assemble Cake?

Hi all!
I want to make a cake with a whipped cream filling and strawberries placed on top. It is for a bridal shower on Sunday at 12:30. If I assemble the cake on say Saturday night will the strawberries inside stay fresh? What about earlier or do I have to do the whole thing Sunday morning? It will also be covered in fondant. Thanks
