Not necessarily the brand, but the percentage. I am looking at using either Lindt or Ghirardelli, but I'm not sure how dark it should be. The cake is yellow with a simple syrup wash, and it will be filled with a vanilla IMBC. I am not a chocolate person (I know, blasphemer) so I don't usually buy it or make ganache. What do you guys like to use?

I use ghiredelli semi-sweet chocolate chips. Works great!

I use a 45% chocolate for my ganache.
