I have a last minute order for a pumpkin cake with cinnamon-cream cheese frosting. It's doable but the cake would have to keep from Tues. until Thurs. since I am going out of town for Thanksgiving. Does anyone know if a refrigerated, cream cheese frosted cake will keep well 2-2.5 days before serving?
