I have the same trouble with my purple fondants. They've turned blue the next day. This is when I use wilton's colors. I'm starting to switch over to Americolor as I go. I hope it makes a difference. Otherwise, I try to buy the pre colored deep pinks and purples.
I'd love to hear the explanation as well.
I read somewhere the other day (it may even have been the americolor site?!) that pinks and one other colour (I'm blanking on that - maybe red?) are just less stable with UV light. They need to be kept away from light as much as possible, and will fade.

In addition to sunlight, fluorescent lights will also cause fondant colors to fade. ![]()
