I have an order for pumpkin rolls and I want a good recipe. I have never made them before so I am gonna make it for Thanksgiving for a "test run" I don't like pumpkin so its hard for me to judge what is good. Any help would be appreciated!
This is my favorite recipe for Pumpkin Roll Cake. It started out a Paula Dean recipe, but I tweeked it to my taste and so far it has gone over great! The cake is more of a chiffon than other cake rolls I have had that were a very dense , rich cake.
Pumpkin Roll
Cake:
3/4 cup cake flour
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground ginger
3/4 teaspoon ground allspice
6 large eggs, separated
1/3 cup granulated sugar
1/3 cup brown sugar
2/3 cup canned pumpkin
1/8 teaspoon salt
confectioners sugar
Filling:
1 cup confectioners' sugar
3/4 teaspoon vanilla extract
2 tablespoons butter, softened
8 ounces cream cheese

For the filling: Whip all ingredients until smooth.
To assemble, unroll the cake and spread the filling over the cake.
Start at 1 long side of the cake roll and, using the towel as an aid, roll up the cake to encase the filling. Place seam side down on serving tray.
I sprinkle the top with a cinnamon / granulated sugar mix and chopped pecans.
