I love the cake Bible as a reference, but ignore her complicated baking powder theory in the back section. I think that she calls it the "rose factor." Way too fussy.
I don't have it yet' I ordered it, but I think I know what you mean because of people talking about it on here. Something about adjusting it differently than the rest of your ingredients when making larger batches? What to you do, just standard math? I rarely need a single batch of anything with a family of 6 and wedding cakes!
I also got a magnolia bakery book that had high reviews.

it' a long, complicated theory about adjusting the baking powder based on the surface area of the pans. The larger the pan, the less baking powder you're supposed to use to adjust for the surface tension on the batter or some such mess like that. I bake large tiers all the time and never have a problem with it and I never adjust anything, so it's more an intellectual exercise than anything else, IMO.
YEAH! It sounds absolutely riveting! I do believe a will skip over that....
