What will happen if I put enough batter for a 2 inch cake into a 3" deep pan?
You'll run into problems when you take the cake out of the pan. If you invert it onto a cooling rack the cake falls out of the pan onto the rack. Because you've got some room it can fall hard onto the rack and could break especially as it is still warm. You can solve this problem by using a thin board same size or slightly smaller than the pan. Support the board with your hand as you turn it over. Once out of the pan gently slide it across onto your cooling rack.
