Can someone suggest a good spring form pan? They say "leak-proof" but they are not.
I just want a good sturdy one that I can use for a long time.
The best on reviews and on America's Test Kitchens is Frieling Handle-It Glass bottom. They are $50.00 each. I use them exclusively in my bakery. The difference is noticeable, but it's the glass bottom's baking abilities.
As for leakage, they all can leak. I always cover the outside with foil because I use a water bath, but I can see evidence in leaking in every pan. Even if they don't leak at first, they may later. But the big issue is that the small amount of leaking does not affect the product. Mostly what you see is some butter leaking out. A little bit doesn't hurt. But throw the pan away if it leaks a lot.
