Does anyone out there have a good cream cheese icing recipe that will produce a good stiff swirl for cupcakes? I like the flavor of the cream cheese, but it seems like the more CC i put in the softer the icing gets, therefore, I lose the swirl shape.

Notice in her picture that they're not exactly "stiff", but they hold up well. The trick is to not over beat the cream cheese (the more you beat it the more it breaks down), and to refrigerate it a bit before piping, to stiffen it up slightly.

Here is my recipe. I use it for swirls and it holds up.
8 oz cream cheese
1 stick butter
1/4 cup hi ratio shortening
4 oz melted white chocolate cooled
2 tsp vanilla (or more)
1 1/2 to 2 lbs confectioners sugar
Beat the first 5 ingredients until a little fullfy. Add confectioner sugar until you reach the consistency you want.

I stabilize my cream cheese icings with a little gelatin like I do my stabilized whipped creams.

I really like adding mascarpone cheese and cream cheese together. Delish but abit more expensive.
