I'm going to airbrush a cake orange for Halloween and the client wants red velvet cake with cream cheese icing. I have yet to find a cream cheese recipe that provides a smooth outer surface for covering the cake. Do I mix it with buttercream? Should I use buttercream with a cream cheese flavoring? Should I use a regular buttercream recipe and freeze the cake then go over it with a hot spatula? Help! Thanks in advance everyone!

There's an absolutely wonderful recipe here on CC called Decorator's Cream Cheese Frosting. It tastes delicious, smooths perfectly, and pipes beautifully. I use it all the time and people love it. HTH!!

post #3 of 5 This is my absolute favorite recipe. Let it crust and you can smooth using a Viva paper towel.
