I'm making my second wedding cake for a friend and she wants a stenciled cake with cream cheese icing because her fiance doesn't like buttercream or fondant. Has anyone tried this? Everything I've found online says to use buttercream or fondant for stenciling. Would a crusting cream cheese icing work with crusting cream cheese or royal icing stenciling? Thanks!
A crusting cream cheese should be fine. I wouldn't try using royal to stencil with. I tried it on a butter cream cake and it melted as it hit the cake. I thinned down my frosting and used it to stencil with. I would try a small sample cake to see if you can achieve the effect you are looking for.
