hello!
I am used to work only with fondant and I have to make a cake frosted with italian meringue. How can I get a smooth surface on my cake with this frosting?????

I've never made italian meringue frosting before. If it is sticky and doesn't crust, I'm not sure how you'd get a smooth finish with it other than using a spackling or putty knife that you can purchase at a local hardware store. You could use that to go around and across your cake to get a smoother finish. HTH

The right tool will help a little, but it's all about practice, practice, and practice. I've done soooo many and I still don't have it perfect. That's what makes this frosting so difficult. I've tried all the cool techniques with not very much luck.

I've just concluded that it's all about how much experience you have.

It is very easy to smooth. I have only used it once but am planning to use it again. It is wonderful to smooth.

For smoothing, I like to cover my cake first with the big icer tip (I think it 489) and then smooth with an angled spatula, the large one.

There is not a whole lot to do to smooth this icing. It is sooo creamy it is a dream to smooth.
