I'm a newbie so I'm not sure about the thickness or the softness. I have found that I like using a pizza cutter better than the cutter made for fondant. I kept getting jagged edges with the fondant cutter.

I use a ruler and an xacto knife for most fondant cutting. Try letting your fondant sit out for a little while before cutting (20-30 minutes) seems to help it firm up so it will cut better.

Ditto. Also, I usually can smooth any rough edges with my finger.
