Another Question Regarding Imbc

Sorry if these questions have been answered before but I have 2 questions. #1 is how long does IMBC keep in the fridge or freezer? And #2, I use the frozen egg whites from GFS with good results but my question is that when I purchase them they are frozen. Is it ok to thaw the egg whites and then measure out what I would need for 1 batch and refreeze the egg whites in individual containers? Thank you in advance
It keeps for a week in the fridge and 7 or so months in the freezer. Your primary concern is it picking up flavors or getting freezer burned so I don't recommend keeping it for that long.
I don't use frozen egg whites but I don't think there is much of a problem defrosting enough to repackage then popping them back into the freezer. That's a processed and pasteurized product so I don't think you have anything to worry about.
