Sugared Fruit

I have a request by a bride for sugared fruit on her cake. I wonder if I sugar the fruit the night before, will it last til the next afternoon? I believe the wedding is at 12:30 and I will be setting the cake up around 10 a.m. Or, do I need to sugar it the morning of? It is a 4 tier cake for 270, so there will be LOTS of fruit on it. Thanks for the help.

Depends on the sugar you use. Sparkling sugar will last overnight.
