Does anyone freeze their leftover Cream Cheese Icing? Does it hold up well? I usually throw out leftover icing, but have quite a bit and hate to waste it.

I made a strawberry cream cheese filling and had tons leftover (you don't need much to fill a cake, I'm finding). I froze the remainder, and the used it about a month later for another cake. It was perfectly fine.

Why not freeze it? Just remember to place in fridge to defost from freezer. Then out on counter top.

Thanks for the info. I have just never tried it and wanted to make sure it wouldn't ruin the consistancy.
