Help With My Cake

Okay new problem, I made a butter cake and filled it with bc and cut up some strawberrys. My problem is that I made the cake Saturday night and by Sunday afternoon I had to toss it because it got so soggy. What did I do wrong? It tasted so good and now my husband thinks he wants to take one to work. Please help! icon_sad.gif

Did you mix the strawberries into the buttercream? If not, that would have worked better, I think.

I did mix it with the bc and it tasted so good but the bottom got really soggy

When I'm using fresh strawberries, I slice or mince them and then lay them on a paper towel in a single layer for about 10 minutes so the paper towel can absorb the excess juice. I've never had anyone report one getting soggy on me. Hope this helps. thumbs_up.gif

Sounds like the fresh strawberries contributed a lot of moisture to your b/c, and as time elapsed made the cake layers soggy.

You can seal the cake layers, top and bottom, by applying the sleeved strawberry glaze, or strawberry filling and then filling with your strawberry/bc filling.

I have never made anything with fresh strawberries because I hear they are tricky! They seep a lot, so I am sure that was your problem. Maybe you could serve your cake with fresh cut up strawberries instead. Or make or buy some other type of strawberry filling.
