What type of oven and size is best for cake shop. Will a half size convection work or can I just use a reg oven?

I use 2 regular residencial gas ovens. My studio is in my home and I didnt have anymore room on my electrical panel for more 210 hook-ups so I had to go with gas and I just love it. Residiential ovens also eliminated the need for commercial hoods for me. I was able to use 2 residiential hoods at a cost of only $30 each (plus install). I am in South Dakota. Be suer to check into the requirements that your state has.
