Expired Edible Markers ??? ...

Hi Cakers!

I have a set of KopyKake edible markers that I have never used. Crap! Of course, I have a need for them this week. The expired date on them is April 2011. 5 months ago.

What does it mean for an Edible Marker to be expired? Does the food coloring ink go bad? Is someone going to get sick if I use them on fondant?

Please explain

I'm sure they're fine--maybe a bit dry, but fine.

I never noticed an expiry date on my markers (I have several types). I keep them in the fridge and I've been using them for YEARS.
