When making ganache, can it be made ahead 3 or 4 days and refridg then rewarmed and poured or is it best to do it the same day or day before???

Also, same with the Cream Cheese whipped frosting?? I want to make what I can ahead of time but I know some frositngs don't store as well.

I would make ganache at most the day before...especially if you are going to leave your cake out for a few days after it is iced. I don't think ganache is at it's best after about 3-4 days.
