I have had a request for cupcakes and a cake that are to be eggless, she wants a white velvet cake ( that she has had before, this one is for her sister in law and has an allergy to eggs) I use the cake bosses white velvet recipe which consists of one box of cake mix which in turn has eggs. How am I going to make this cake using a mix with no eggs?

There is an egg substitue product called Ener-G Egg replacer that I use to make eggless cakes. I have previously purchased it at Kroger. It doesn't rise the same as when using eggs and the cake is very "fragile", but it works. It has a potato starch base, with tapioca flour and leavening agents.

Ener-g doesn't hold up well in cake mixes. They'll fall apart and are absolutely not stackable.

look at vegan websites . Here's a base recipe that is vegan that I use. If they can handle dairy you can use whole milk instead of soy.

I use almond milk in my baking recipes. And if you ever need to boil a non-dairy milk, do not use soy. It will burn!
