Question About Piping Gel?

I am going to use it on top of a waterfall I am placing on a cake. Does it have a taste?any tips on using it to achieve a shiny appearance to my waterfall?

It is sweet like corn syrup...It will turn matte when it starts to set..and if you refridgerate it..the gel will go rubbery...I have aibrushed it with pearl and it has a nice look to it..kinds misty..
