Cupcakes dry out pretty fast...I'd probably do them Friday night or Sat morning, unless I had some good way of keeping them from drying out.

Try baking them tonight & freeze them until Saturday morning/ Friday evening. I find that my cupcakes get more moist when I freeze them

Do you ever have problems with the cupcake papers pulling away from the cake before you even frost them?

When I have a large order I also freeze my after I bake them, seal up tight so no freezer burn and they defrost quite quickly. I make them up to a week in advance and have had no taste problem.
