Hello to everyone! I am new to this, but have been reading this forum for a while. I have learned a lot from all of you and enjoy it so much! I have had a request to make 200 cupcakes for a wedding. They are to be red velvet (box mix) with piped swirled icing with a script "B" on top. The lady has already purchased the cake mix and icing mix. How much should I charge per cupcake? Also, could I freeze these? Before or after they are iced? Thanks!!

Wow, that's a tough one because it is a matter of pricing your time and talent as she has already bought the supplies. The supplies x 3 or so rule maybe couldn't be used...

Oh, and I would do the freeze before icing.

Sorry I couldn't help but here's a bump. icon_smile.gif

is it just me, or does anyone else find it weird that the customer is buying the cake mix and the icing mix (icing mix????)

Perhaps they bought the items intending to make them themselves? Maybe they thought it would cut your costs for them? Although they have purchased the basic things you still need to add the other ingredients, depending on how you "doctor" them will decide how much to charge. Remember cupcakes are still a lot of work, sometimes more than a cake!
Also, freeze before icing and they should be fine.

I would figure the amount of supplies (even though you didn't buy them) and double that amount. That way you are still getting the other 2/3 out of doing it.

She told me that she had someone else hired to make them, and they have backed out on her. I figure she bought the stuff to make it herself or get a friend to do it. Then, she couldn't find anyone. So, here I am. The wedding is March 10, 2007. I don't mind the work, just don't know how to charge! I've never done anything like this before!! I've made a lot of the character cakes, not so many for weddings though!

or you could take the $3.50/serving x 200, and say $25/hour for your labor. Or something similar. And did she buy the cupcake paper things? If not, charge her 3x for those.

Delivery? Set up? Paperwork for the contract? Those all have to be figured in.

Normally, I would charge a $1.00 a cupcake (if it is a simple design). So with the supplies being purchased and delivered I would charge $0.50 a cupcake. If there were supplies that still needed to be purchased I would go to $0.75 a cupcake. That would give you profits of $100.00 or $150.00. Just another opinion.
