Personally I have never done one but I would probably carve the cake to look like a slice was missing and cover the cake in fondant. You can spread a layer of buttercream inside the cut and press cookie/cake crumbs onto it to resemble the inside of a cake. The piece of sliced cake I would do the same way with cookie/cake crumbs.
