I find that well wrapped uniced cakes will stay fresh in the freezer for up to 3 months. I put a cardcoard cake circle under the cake and wrap with a few layers of plastic wrap. I then add a layer of aluminum foil. For cupcakes I individually wrap with the plastic wrap and then I double bag them with plastic freezer bags. I put a piece of masking tape on the outside with the date it was frozen and what kind of cake it is.
