I have a question for you all. When you stack cakes how do you go about icing them with sugarpaste. Do you ice the bottom one, put the next cake on then ice it while on the bottom cake or do you ice all the cakes then stack them after? If you do it the second way how do you stack the cakes without damaging the icing? Thanks

Definitely ice and cover in fondant BEFORE stacking. It's helpful to use a big spatula that's strong enough to support a cake tier when you stack them. It takes a little practice and a little luck not to have boo-boos to fix. But it can be done!

Adding borders is best done after the cakes are stacked. Decorating the tiers can be done before or after. It depends on your design.

Also, I stack my cakes after they have been chilled so that the buttercream is "firm" under the fondant/sugarpaste.
