Hi CC friends!
I'm doing my 2nd ever wedding cake next weekend and am looking for an easy yet sturdy chocolate mousse type filling for a chocolate cake. I've searched the few recipes available here and really didn't see one I want to try except for the Costco Mousse filling recipe. I need to be able to travel about 2 hours without my cake layers sliding. lol I've used chocolate ganache as a filling before. I didn't care for the semi sweet (bitter) chocolate in it (Not a huge chocolate fan myself) and didn't care for it much, although hubby (chocoholic) loved it.
Any ideas would be much appreciated.
Thanks!!
I think the costco mousse is the same thing I make (I use Pastry Pride and pudding mix). I just made some last weekend for a cake that was for an outdoor party and the cake sat out for about 3 hours in the heat and it held up great. It was the second tier in a 3 tier cake, and I had no problems with settling or transporting it.
I used chocolate fudge pudding and squirted some Hershey's syrup in for extra flavor.
