I am pretty new to cake making. I make my RKT ahead of time so the figure sets well then cover them. Am I supopse to cover them last minute so you can eat the RKT? because I have been covering them a few days ahead to harden since I live in a very humid climate? ![]()
RKTs don't go bad fast at all, so you can cover them however far in advance you want. I have a lot of humidity problems, too, and if I need a particularly sturdy RKT figure, I do it over a week in advance so that the fondant I cover it with has a chance to dry out. All you have to do is make sure you protect your figure from dust (and from the light if the fondant is colored).
