AAAWWW!!! I can't seem to avoid those ugly powdered sugar balls and when I go and put in the fondant on the already iced cake you can see all the little sugar balls...and they end up tearing the cake it's so ANNOYING!!! I tried sifting it but it just helps a little not much....does anyone have any tips on this??? I would truly appreciate it!!! Thanks guys.

Use the best and finest grade powdered sugar that you can afford (I think this is 10x in the US, not sure?!). The best powdered sugars also contain a little cornstarch that is there to prevent the clumping problems. I know that the powdered sugar I use from the UK is far superior to the powdered sugar that I buy here because it has cornstarch and is a finer grain - I save the UK stuff it for Royal and MMF if I'm running short, and use the local stuff for buttercream (where you can get away with a coarser grain - but only if you don't intend to pipe it through tiny tips (1s, 1 etc)!
Are you using store-brand sugar? I have major problems when I try to save a few pennies that way.
Or....maybe you need a finer sieve.
Or...when you get down to the last little bit and there are little balls of sugar in the sieve...don't force them through the holes. They won't break into smooth sugar. They'll just break into even smaller balls that will show up in your tips or, in your case, your fondant.
There was a similar post recently about the sugar balls in MMF. here's the link, I hope it helps. ![]()
