im making my cousins bday cake and i need it for saturday and its going to have chocolate mousse in between the layers covered in chocolate fondant how long can i have it in the fridge for i dont want it to get dry well any tips will help ladies..

The fridge dries out cakes, so I wouldn't any longer than a day. But I freeze all my fondant covered cakes for days, weeks or sometimes up to 2 months. You'd never know that they were frozen. Just put the fondant covered cake in a cake box or container, puts 2 garbage bags over that container (push as much air out as possible) and freeze. Let it come to room temperature and thaw out the day of. It will be tacky to the touch at first, but will dry off on it's own in a couple of hours.
