Rum Soaked Cake

A co-worker is ordering a chocolate cake soaked in rum filled with strawberries but with no wc or bc. So a few questions...

~Is it tacky of me to have her pick up the rum or do I just ask her which one she would like?

~How do I soak the cake?

~How do i decorate and fill the cake with strawberries without wc or bc?

Hi Sara,

You could probably get by with picking up an individual sized bottle of rum (like those served on airplanes).

I would split two cake layers and brush the layers with an alcohol infused simple syrup.

Does your co-worker want fresh strawberries, fresh strawberries in glaze, or the strawberry sleeved filling?

If she wants the strawberries in glaze or the sleeved filling, just fill the cake layers as you would normally but leave more room where your frosting dam would be for expansion.

Too much filling is going to ooze because there's no dam so be careful.

They would work well in your situation.

For the top, I might just use some glaze to glue down a few whole (but sliced & fanned) strawberries in the very center of the cake.

First I poke holes all over the cake, then i mix light syrup with rum and brush all over the cake. another way is to wrap the cake (that is if I'm using a loaf cake) with a cheese cloth and submerge quickly in the rum mixture.
